Elderflower: Native to Central Europe, elderflower is a shrub particularly widespread in Switzerland and other temperate regions of Europe, notably in Asia Minor. Native to the Caucasus and Siberia, it belongs to the Caprifoliaceae family and was recently reclassified into the Adoxaceae family. This vigorous plant can reach up to 5 meters in height and prefers nitrogen-rich soils. Sambucus nigra (black elderberry) is very common in Europe, producing small, edible black berries with purple juice. Historical uses: Known since antiquity, elderberry was used to make flutes because its stems are hollow. Over the centuries, it became a "country pharmacy." Roman aristocratic women used its berries to dye their hair. It is also known by various names such as "sambuc," "hautbois," "saou," "arbre de judas," "suier," and "seuillon."
