history
peppermint is a hybrid perennial plant that grows to a height of around 80 cm. It was introduced to England at the end of the 18th century and is now widely cultivated in Europe, Asia and North America (the United States is a major producer).
There are many varieties of mint with varying degrees of aroma. Peppermint, which is very rich in volatile aromatic compounds, has a flavour that is initially peppery/burning and then very fresh.
Its essential oil is renowned for its tonic and digestive properties. Hydrosol, produced by steam distillation of the leaves and flowering tops, is a mild and easy-to-use form, appreciated for its refreshing, soothing and toning effects.

sprayed on heavy legs, it tones and brings lightness. Excellent after-sun: it immediately refreshes and calms redness.
- cooking
perfect for mint ice cubes (equal parts water and hydrosol) to add to summer drinks. Also ideal in creams, seaweed flans, mint sorbets (water + hydrosol + honey) or raw chocolate mousse.
precautions
hydrosols are sensitive to contamination. Store in a cool place, away from light and heat. If you notice a suspended deposit, filter using a paper filter. If fermentation occurs (change in appearance/smell), do not use.
